Mackerel Salad with Egg
Try this mood-boosting lunch, with anti-inflammatory omega 3 fatty acids that support nerve cells. It is rich in B vitamins and magnesium, boosting the levels of feel-good chemicals such as serotonin.

- 2 boiled eggs
- 60g mixed salad leaves
- 6 cherry tomatoes
- 1 tbsp pumpkin seeds
- 1 fillet smoked mackerel
- 1 tsp olive oil
- 1 tsp lemon juice
- Salt and Pepper
- optional extras: cucumber & red onion slices
Instructions
- Place the salad leaves into a bowl
- Chop the cherry tomatoes into 4 and then add
- If using cucumber and onion add to the bowl
- Sprinkle over the pumpkin seeds
- Break up the mackerel fillet into the bowel
- Quarter the boiled egg and place in the salad
- Drizzle over the olive oil and lemon juice and mix to dress
- Season as desired with salt and pepper
