Acai Breakfast Bowl

A quick and easy breakfast dish that combines high-fibre oats with seeds, balancing blood sugars and slowing insulin release. One of the ways in which the brain stays healthy is by cleaning up cells that are toxic or no longer working, a process known as autophagy. It makes way for new nerves to form, enhancing communication between brain cells. As we age, this process works less efficiently. Acai helps stimulate this “housekeeping” response in brain cells and supports mental health.

Ingredients

  • 80g soaked GF oats
  • 2 tbsp soaked chia seeds
  • 2tbsp acai berry powder
  • 2 banana’s, 1 fresh, 1 frozen
  • a handful of frozen blueberries
  • a handful of fresh blueberries
  • a handful of mixed seeds – sunflower/pumpkin
  • 300ml coconut yoghurt
  • grated dark chocolate – 85% cocoa solids

Method

  • Blend soaked oats, coconut yoghurt, frozen banana, frozen blueberries, chia seeds and acai powder together in a food processor
  • Divide mixture into 2 bowls
  • Top with fresh blueberries, sliced bananas, sunflower and pumpkin seeds
  • Garnish with grated 85% chocolate
