Nut butter granola with coconut and seeds

Shop-bought granolas are often packed with sugar. Here the protein and fibre slow down the absorption of sugar keeping your blood sugar levels stable and avoiding the mid-morning slump. Make a batch of this to last the week. Experiment with different nuts and seeds to suit your own personal taste.

Ingredients

Scale
  • 60g coconut oil
  • 110g gluten-free porridge oats
  • 25g pumpkin seeds
  • 25g sunflower seeds
  • 25g chopped hazelnuts
  • 25g desiccated coconut
  • 25g chia seeds
  • 3 dates, chopped into small pieces
  • 2 tbsp honey (or maple syrup if vegan)
  • 2 tsp cinnamon
  • 2 tbsp peanut butter

Instructions

  • Heat oven to 170°C.
  • Melt coconut oil.
  • Mix all ingredients together.
  • Place on a lined baking tray.
  • Bake in an oven for approximately 20 minutes until it starts to turn golden.
  • Remove from oven and leave to cool completely. This allows it to clump together.
  • Place in an airtight container.
  • Serve with your choice of milk.
