Toasted Tasty Tuna Melt

This tasty dish is a perfect balance of nutrients and a fantastic choice for supporting mental health. The combination of protein and complex carbohydrates makes the meal low glyceamic which is perfect for balancing blood sugar levels. This is important for mental health as sugar spikes can often cause mood swings and uneven levels of energy/ focus.

Ingredients

  • 1 tin of tuna
  • ½ cup of mixed tomatoes
  • ½ red onion
  • ½ cup of spinach leaves
  • A handful of mixed leaves
  • 1 tbsp quark cheese
  • Squeeze of lemon
  • 1 tsp extra virgin olive oil
  • A handful of grated cheese
  • 1 or 2 slices of porridge bread

Method

  • Dice the red onion
  • Mix the tuna with the quark cheese, onion and lemon juice in a small bowl
  • Put the grill on
  • Place the tuna mix on top of a slice of porridge bread
  • Sprinkle the cheese on top of the tuna
  • Place it under a grill for 3-5 minutes or until golden
  • Serve the tuna melt with spinach leaves, mixed seeds and a splash of extra virgin olive oil
