Sweet Potato & Lentil Burgers

The ingredients in these burgers are specifically chosen to support mental health. The folate-rich red lentils contained in this dish support the nervous system while the vitamin B6 containing sweet potatoes aid with serotonin production. Eggs are a source of vitamin B12 to support neurotransmitters and B5 to enhance brain function.

  • 300g sweet potatoes
  • 40g red lentils
  • 25g kale
  • 50g ground almonds
  • A handful of fresh mint leaves, finely chopped
  • 30g strong cheddar cheese, grated
  • 1 tsp mild chilli flakes
  • 1 omega 3 rich egg, beaten
  • 1 tbsp olive oil
  • Salt and pepper to season


  • Pour ½ pint of boiling water into a steamer pan and add the lentils
  • Peel and chop the sweet potatoes and place in the first steamer layer
  • Cook the lentils and sweet potatoes for around 10 minutes, placing chopped kale in the top steamer layer after 5 minutes, and cook for a further 5 minutes
  • Strain the vegetables and lentils, mash the potatoes and combine with the grated cheddar, mint, chilli flakes, almonds, egg, salt and pepper
  • Shape into two burgers, coat in olive oil and cook in the oven, gas mark 6/200 degrees for 20 minutes, flipping over after 10 minutes
  • Serve the burgers in wholemeal buns with salad and vegetables of choice
