Spicy Scrambled Eggs on Quinoa Toast

These spicy scrambled eggs are great for gut health. Fibre-rich plant foods like quinoa feed our gut flora and the onions contain a prebiotic polysaccharide called inulin.  A prebiotic is essentially something that supports and enhances the growth and development of the bacterial colony (flora) within the digestive tract (gut). As a result gut function is considerably impacted when this good bacterial colony is improved. This flora regulates all aspects of gut management from gut contractions to localised repair of gut tissue.

  • 2 medium organic eggs
  • 1 slice of quinoa bread
  • 1 cup of diced red onion
  • 1/4 tsp cumin seeds
  • 1/2 tsp turmeric
  • 1/4 tsp chilli flakes
  • 1/2 tsp coconut oil
  • Pinch of salt
  • (optional extras: black pepper, finely chopped coriander)



Place the oil in the frying pan and heat gently on the hob and add the red onions. Toast the quinoa bread

To a bowl, add the eggs, cumin seeds, turmeric, chilli flakes, pinch of salt and whisk

Add the mixture to the frying pan and allow to cook gently with the red onions

Keep stirring the eggs until they are just done and onions are soft

Place the toasted bread in the centre of the serving plate and top with the scrambled eggs

For additional optional seasoning, add finely chopped coriander and/or black pepper.
