Salmon & Lentil Salad

This lunch combines quality carbohydrate in the lentils with protein from the salmon in order to balance blood sugar levels for an even mood. Lentils contain vitamin B1, Thiamine, which helps the brain with concentration and a lack of this vitamin can lead to feeling tired and groggy.

  • 2 cooked salmon fillets
  • 250g cooked puy lentils
  • 200g tenderstem broccoli
  • 1 tsp dijon mustard
  • 200ml extra virgin olive oil
  • 1 tsp apple cider vinegar
  • 1 clove crushed garlic
  • 2 chopped shallots


  • Blanch the broccoli by submerging in boiling water for a couple of minutes, then rinsing in cold water, drain and set aside.
  • Make the dressing by combining the olive oil, mustard, garlic, vinegar, shallots and salt and pepper.
  • Arrange the lentils and broccoli in a bowl and stir through the dressing, flake the salmon into it.
