Nut Butter Granola with Coconut & Seeds

This great tasting homemade nut butter granola is quick and easy to make. It’s packed with fibre and protein, keeping you full until lunch. Shop bought granolas are often packed with sugar.  Here the protein and fibre slows down the absorption of sugar keeping your blood sugar levels stable and avoiding the mid-morning slump. Make a batch of this to last the week. Experiment with different nuts and seeds to suit your own personal taste.

Ingredients

  • 60g coconut oil
  • 110g gluten free porridge oats
  • 25g pumpkin seeds
  • 25g sunflower seeds
  • 25g chopped hazelnuts
  • 25g desiccated coconut
  • 25g chia seeds
  • 3 dates, chopped into small pieces
  • 2 tablespoons honey (or maple syrup if vegan)
  • 2 teaspoons cinnamon
  • 2 tablespoons peanut butter

Method

  • Heat oven to 170 C
  • Melt coconut oil
  • Mix all ingredients together
  • Place on a lined baking tray
  • Bake in an oven for approx. 20 minutes until starts to turn golden
  • Remove from oven and leave to cool completely. This allows it to clump together.
  • Place in an airtight container
  • Serve with your choice of milk
