Mackerel Salad with Egg

Try this mood-boosting lunch, with anti-inflammatory omega 3 fatty acids that support nerve cells. It is rich in B vitamins and magnesium, boosting the levels of feel-good chemicals such as serotonin.

  • 2 boiled eggs
  • 60g mixed salad leaves
  • 6 cherry tomatoes
  • 1 tbsp pumpkin seeds
  • 1 fillet smoked mackerel
  • 1 tsp olive oil
  • 1 tsp lemon juice
  • Salt and Pepper
  • optional extras: cucumber & red onion slices


  • Place the salad leaves into a bowl
  • Chop the cherry tomatoes into 4 and then add
  • If using cucumber and onion add to the bowl
  • Sprinkle over the pumpkin seeds
  • Break up the mackerel fillet into the bowel
  • Quarter the boiled egg and place in the salad
  • Drizzle over the olive oil and lemon juice and mix to dress
  • Season as desired with salt and pepper
