Cinnamon Toasted Oats with Roasted Pineapple

A breakfast of cinnamon toasted oats with pineapple and kefir is great if you are suffering from digestive issues. Oats contain high amounts of the soluble fibre beta-glucan, which forms a gel-like substance and softens up gut contents, moving everything along comfortably. Kefir is a fermented milk product that provides the body with beneficial pre and probiotics, great for gut health.

Ingredients

  • Half a small ripe pineapple cubed
  • Zest and juice of 1 lime
  • 2-4 Tbsp kefir
  • Cinnamon to taste
  • Coconut oil to oil a pan
  • Few sprigs chopped peppermint
  • 1 tsp fennel seeds
  • 50-70g oats
  • 30g dried or fresh coconut 

 

Method

  • Mix kefir with lime juice and chopped mint
  • Toast the oats off in a medium heated pan with a few pinches of cinnamon, the fennel seeds, and coconut until the oats are golden
  • Set aside in breakfast bowl
  • Fry the pineapple on a high heat (in the same pan) with the coconut oil, then sprinkle the lime zest on at the last minute 
  • Serve with the kefir mixture and oats
