Apple, Date and Walnut Breakfast Bars

These breakfast bars are a great snack for the afternoon. Oats are a good choice when it comes to the health of your digestive system and can ease constipation. They contain soluble fibre in the form of beta-glucan, which dissolves inside the digestive tract where it forms a gel. Dates have been identified as one of the very best sweet and versatile foods that can regulate the digestive process, and they have been shown to help provide relief from a range of intestinal disorders.

Ingredients

  • 250g of Organic Oats (GF if required) 
  • 50g of Dates
  • 2 tbsp of Coconut Oil
  • 25g of Chopped Walnuts
  • 150g of Sliced Apples

Method

  • Line a deep square or rectangular dish or baking tray
  • Place a frying pan on medium heat on the hob and add 2 tablespoons of Coconut Oil. Heat until melted
  • Add the Oats and stir until it is coated with the oil, remove from the direct heat
  • Chop the Apples, Walnuts and slice the Dates, into bite-sized pieces
  • Stir the Walnuts, Apples, and Dates into the oat mixture
  • Pour the mixture into your pre-prepared dish
  • Leave in the fridge for at least one hour or until set
  • Remove from the fridge and divide into 12 bars
  • Serve two bars per person
