Baked Crusted Salmon with Veg

This crusted salmon coated in sunflower and pumpkin seeds helps boost brain health thanks to its high nutritious value offering various important nutrients, especially essential fatty acids. DHA is the most abundant omega-3 in the brain and plays a critical role in its development and function. EPA offers beneficial effects on mood disorders while DHA offers more protection in neurodegenerative diseases.

  • 1 salmon fillet
  • 1 tablespoon oats
  • sunflower seeds
  • pumpkin seeds
  • 1 tablespoon lemon juice
  • salt, pepper, garlic powder to taste
  • extra virgin olive oil
  • ½ sweet potato, baked
  • a handful of broccoli florets, steamed


  • Drizzle salmon with lemon juice and season with salt, pepper and garlic powder
  • In a separate bowl mixed crushed pumpkin seeds, sunflower seeds and oats
  • Coat salmon with the seed mixture pressing lightly to make sure the mixture sticks to the salmon
  • Bake in the oven until cooked through, approximately 20-30 minutes depending on the thickness of the fillet
  • Serve with sweet potato and broccoli
